(8/2023) We LOVE this stuff. Made from 80% Chenin Blanc and 20% Chardonnay, this traditional-method sparkler spent 12 months on its lees before being finished with a 6.5 g/L dosage, roughly half the limit for Brut Champagne. An affable artisan bubbly that you can pop any day, its explosive mousse bellows super-satisfying notes of quince, lemon, white cherry, green apple, apple blossom, honeycomb and chalk. When you consider the crazy low price, it is nonsensically good.
